Sharing Recipes

A few days ago, a friend asked about recipes I make for the holidays. Some things, I have made for many years, and it wouldn't be Thanksgiving or Christmas without them. Sorry, I don't have step-by-step photos of these; these are things so good and fattening that I just make them on special days.

Sweet Potato Casserole
4 cups sweet potatoes, cubed
1/2 cup white sugar
2 eggs, beaten
1/2 teaspoon salt
4 tablespoons butter, softened
1/2 cup milk
1 teaspoon vanilla extract

1 cup packed brown sugar
1/3 cup all-purpose flour
3 tablespoons butter, softened
1/2 cup finely chopped pecans

Preheat oven to 325 degrees F (165 degrees C).
Put sweet potatoes in a medium saucepan with water to cover. Cook over medium high heat until tender; drain and mash. You can use canned sweet potatoes if you don't have fresh ones.

In a large bowl, mix together the sweet potatoes, white sugar, eggs, salt, butter, milk and vanilla extract. Mix until smooth. Transfer to a 9x13 inch baking dish.

In medium bowl, mix the brown sugar and flour. Cut in the butter until the mixture is coarse. Stir in the pecans. Sprinkle the mixture over the sweet potato mixture.

Bake in the preheated oven 30 minutes, or until the topping is lightly brown.

Holy Smoke Pie
Crust:
1 cup of flour
1 stick of butter
1/2 cup finely chopped pecans

Cut butter into flour and add pecans. Using fingers, pat mixture into the bottom of a buttered 9x13 pan. Bake at 350 degrees for 10-12 minutes until crust is firm and lightly browned. Set aside to cool.

1st Layer:
1 cup confectioner's sugar
8 oz. cream cheese
~1/2 cup of whipped cream
Mix together and spread on cooled crust.

2nd Layer:
Small box of instant chocolate pudding, mixed according to package directions.
Spread over cream cheese layer.
You can use other flavors of pudding here if you don't like chocolate.

3rd Layer:
Whipped cream, as much as you want. I usually buy a 12 ounce container. I take out the 1/2 cup for the first layer, then use the rest of it on top.

Garnish with chopped pecans and/or chocolate curls or whatever you want to.

This can be made a few days before you need it. I can't tell you how long it will last; we always eat it all the first day!

Check by later for the coconut cake recipe.

  1. I know what you mean by being good and fattening. I make that sweet potato casserole, but I use 4 lbs of sweet potatoes (don't know how that relates to cups),1 cup of sugar and 1/2 cup of melted butter. It is so good, though. Ever since my kids watched me make it one day (and saw all the good stuff put in it), they love it! I have never tried the Holy Smoke Pie before.

100 miles or less: Rattlesnake Saloon

The Rattlesnake Saloon was opened on Labor Day, 2009.  Dining there is an unique experience. It is way out in the boonies in Colbert County, Alabama.  It is hard to get to, even for locals, but they have had visitors from all over the United States and many countries throughout the world. Sitting comfortably under the huge rock overhang, I couldn't help but think about the people who have sought shelter there from storms or heat.  I can imagine the Native Americans using this place for a meeting area or a dry place to camp for a while.  Not so many years ago, it was used as a pig pen. They have good food and live music and a hitching post if you want to ride your horse there.  Most of us were picked up in a pickup, called the "Saloon Taxi", that runs from the parking lot to the restaurant continuously while they are open. The Rattlesnake Saloon is aptly named.  During construction, workers unearthed a mother rattler with twelve babie...

Amish in Stantonville, Tennessee

Last week, my sis and her hub went with us to the Amish community near Stantonville, Tennessee.  It was a beautiful day, and we love driving to new places and finding new treasures.  We enjoy these mini-trips we take together, where we giggle a lot and get caught up on everything.  Also, the squirrels ate all our tomatoes, so we needed to find some to buy. You know the food you are buying is fresh when they bring it from the field while you are standing there waiting for it. Here is part of what we brought home, and it was all delicious. Stantonville is located in McNairy County, Tennessee, northwest of Shiloh National Military Park.

Old Water Tower in Florence, Alabama

So, we have lived in Florence since 1986 and I didn't see this old water tower until last week.  Shame on me.   It is located on Seymore Street, in a residential neighborhood in Florence. Listed on the National Register of Historic Places, this tower of native stone was completed in 1890 as the foundation for a wrought- iron tank with a capacity of 280,000 gallons of water. It is 70 feet high and is located on the highest elevation in the city. Water was pumped here from Cypress Creek. It was constructed during the Industrial Boom at which time the population of Florence increased from approximately 2,000 in 1887 to over 6,000 in 1889. It was replaced by the adjoining standpipe in 1935.   (from historical marker on site.)   I'm sure there was lots of planning, lots of discussion about funding, and lots of joy when this water tower was completed.  Not one person who was there to celebrate its completion is alive today, but the water...
